This weekend I made a couple recipes that I {LOVE}! I just thought I would share them with you, if you would like to try something new!
STUFFED PEPPERS
- ¾ cup brown rice (we used white, it was faster and tasted fine)
- 3 large peppers, halved and cleaned
- 2 tbs olive oil
- 1 onion, chopped
- 2 garlic cloves, minced
- 1 jalapeño pepper, seeded and diced
- 1 can black beans, rinsed and drained
- Chili powder, to taste
- Paprika, to taste
- Oregano, to taste
- Cumin, to taste
- Salt and pepper, to taste
- ⅓ cup corn (frozen or fresh)
- Cilantro, roughly chopped
- 1 cup cheddar (or preferred) cheese, shredded
Instructions
1. Preheat oven to 375 degrees. Cook rice according to package directions
2. Heat olive oil in large skillet over medium/high heat. Cook onion until tender, about 3 minutes. Add garlic and jalapeño pepper and cook about 2 minutes. stir in beans and reduce heat to low. Stir in cooked rice, corn, and all seasonings except cilantro.
3. Line baking dish with foil. Stuff each pepper half with rice and bean mixture. Top with cheese and cilantro and bake about 12-15 minutes. Garnish with additional cilantro, if desired. Serve and Enjoy!

Thank you Pinterest! It is always nice to find a recipe that is actually really great, sometimes it is hit or miss. I am glad that this was not a Pinterest fail! Well, for me at least. Brandon definitely wished there was meat in it. Maybe next time I will add some. But I found this to be pretty light and yummy! And it felt like I was eating pretty dang healthy, so that's a plus! I will be making this one again for sure.
Avocado Salsa
- 1 ripe Avocado
- 1 Jalapeño pepper, stemmed and quartered (we seeded for less heat, we have tried both and prefer seeded)
- 1 cup water
- 1 tbs white vinegar
- ¾ tsp salt
- 2 tbs minced fresh cilantro
- 2 tbs diced onion
Instructions
1. Combine the avocado, jalapeño, water, vinegar, and salt in a food processor(We used our Blendtec, so I am sure you can use a regular blender too). Puree the mixture for several seconds on high speed, or until the jalapeño is finely minced.
2. Pour the mixture into a medium bowl. Stir in the cilantro and onion. Cover and chill the salsa until you are ready to serve it.
(Makes 1 ½ Cups)
Brandon and I absolutely Love this recipe. I had a coworker tell me about this one. This is El Pollo Loco's Avocado Salsa recipe. We have never been there, but I looked this up and it did not disappoint. It is a new fave of ours. Not only because it is delicious, but it is super fast and easy! We highly recommend this one.

Oh, and I made some cupcakes for my little primary kids. Funfetti Cake Mix is THE BEST. They aren't very pretty, but it was last minute, and they are 4, they don't really care what they look like anyways! Apparently Brandon did not like the cream cheese frosting I made. He said it wasn't sweet enough. I thought they were perfect! But then again, it is hard to disappoint me when it comes to a cupcake. I love me a cupcake!
